Taylor and I have been taking advantage of the apples already this season. We visited one of our local farms, Hoffmire Farms.Taylor had such a blast pulling the little radio flyer wagon they gave us. She picked some great apples from Cortland's to Red Delicious. We even were able to pick up some cute little gourds for decorating the house. Since we have so many apples I thought I would share a apple recipe with you.
Peanut Butter Apple Cookies
Makes about 2 Dozen Cookies
1/2 Cup of Butter ( Room Temp)
1/2 Cup Peanut Butter ( I used Chunky)
1/2 Cup Sugar
1/2 Brown Sugar
1 Egg
1/2 Teaspoon Vanilla
1 1/2 Cup Of Flour (I used Wheat but you can use whatever)
1/2 Teaspoon Of Cinnamon
1/2 Teaspoon Salt
1/2 Teaspoon Baking Soda
1/2 Cup of Shredded Apple (Medium Apple of your Choice)
Gather All your ingredients:
1. Start by mixing your Butter, Sugars, and Peanut butter
mix until mixture is light and fluffy
2. Mix in your egg and vanilla extract
Make sure you fully mix in the egg before moving on
3. Mix your Dry Ingredients
In a separate bowl mix the Flour, Baking powder, Salt, Cinnamon (not pictured)
4. Slowly mix Dry and Wet Ingredients
5. Stir in the Grated Apple
6. Plop Tablespoon sized balls onto your greased baking sheet
Then Bake at 375 for 9-12 Minutes let them cool on the baking sheet for a few minutes then transfer them to a cooling rack.
And there you go! you have so yummy festive Peanut Butter Apple Cookies, Try not to eat them all in one day! Or hey why not.
My Daughter soccer team sure will be excited for them!
